Sassy Spirits and Bites with NACE … 3rd Edition
Hello Sassies!
This month for my special feature with NACE, we have Linwood Campbell, CPCE, a native of Charlottesville, Virginia who started his hotel career in 1987 as a housekeeper and then very quickly worked his way through the ranks within two years to be a Director of Catering and Convention Service. For more than two decades Linwood has been a major mentor in the catering industry. Here’s our boy Linwood!

Linwood has work for Hilton Hotels, Intercontinental Hotels and now with Starwood Hotels and Resorts as the Senior Convention Services Manager for the Westin Charlotte. Linwood has been a member of NACE since 1997. During his 12 years as a member has been very active on the chapter level and national level.
In his spare time, he works as a coach for young women competing in the Miss America Organization (SASSY!!!!! ALERT!). He finds great reward in helping others achieve their dreams.
First up we have a simply divine martini! It’s 5′oclock somewhere as they say!
Balsamic Vinegar Martini
Ingredients
3 shots of your favorite Vodka (75 ml).
3 ml of good balsamic vinegar (about a dash, experiment to find what is just right for you).
1 large, juicy strawberry.
some orange rind.
Balsamic Vinegar Martini Recipe Directions
Chill the martini glass and the vodka by placing them in the freezer. Leave for about one hour if you can.
In a bowl or plate, add the balsamic vinegar. We are going to roll the strawberry in this container, so you just need enough room to accommodate the strawberry.
Take the strawberry and roll it in the vinegar from the previous step. Try to cover the whole strawberry, then put into frozen glass.
Add the Vodka to the chilled martini glass.
Squeeze the orange rind on top of the glass so the juice goes into the glass. Rub the rind all around the rim to give it an orange flavor.
Serve with a smile! And while you’re at it, try this delicious Granny Maddox’s Cornbread!

INGREDIENTS
1 cup all-purpose flour
1 cup yellow cornmeal
2/3 cup white sugar
1 teaspoon salt
3 1/2 teaspoons baking powder
1 egg
1 cup milk
1/3 cup vegetable oil
DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C). Spray or lightly grease a 9 inch round cake pan.
In a large bowl, combine flour, cornmeal, sugar, salt and baking powder. Stir in egg, milk and vegetable oil until well combined. Pour batter into prepared pan.
Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
